It’s almost Valentines Day - time to start thinking about your sweetie. If store-bought flowers and candy aren’t your thing, how about baking some cookies? These window jam cookies are simple to make - just a few steps more than rolled sugar cookies.
To make, cut out the same number of windows and backs (I like using hearts, but circles, squares or any other shape will work just as well), careful to cut the window out from the very center of the cookie. Bake cookies and remove from oven.
Once cooled, dust the window cookies with superfine sugar or powdered sugar. Next, spread a small amount of jam on the back cookie, then gently line up the edges of the window cookie and place on top. Press lightly to seal and allow to set.
