I love a good sale, so when the local store had potatoes on sale for a good price, we bought a couple of 10-lb bags, knowing that they’ll most likely keep through the winter months.
What to do with all those spuds? My first order of business was a nice batch of creamy potato soup. It only take a couple pounds of potatoes, an onion, some garlic and chicken stock, and this creamy soup will be ready to warm you inside and out. Add some cooked and cubed or shredded leftover turkey or chicken to add extra protein, or have it veggie style.
Ingredients
1 medium onion, diced
4 cloves garlic
2 lbs. potatoes, diced
4 cups broth (chicken, turkey or vegetable)
1 cup milk or cream
Salt and pepper, to taste
Cheddar cheese, scallions and bacon for topping, if desired
In a large stock pot over medium heat, saute onions and garlic in 2 tbsp. oil until soft. Add diced potatoes and broth and bring to a boil. Turn heat to low and simmer, partially covered, for 20 minutes or until potatoes are soft. Remove from heat and add milk or cream.
Using an immersion blender, blend soup until to desired consistency (I like to leave some lumps). Alternately, you can pour the soup into a blender to blend.If adding turkey or chicken, add now and let it sit for a few minutes to warm up.
Salt and pepper to taste, and garnish with chives or scallions, cheddar cheese, and/or bacon.
Makes about 6 servings.

I used to live on just soup like this when I got sick. It’s amazing to me that such simple ingredients can turn into such a great meal.

Thank God I found this recipe! I have been craving potato soup! I swear I am a junkie! A lot of other recipes add way to much junk, but this one is simple and definitely tastes te best! Thanks so much! XOXO

It’s about 10 degrees above zero here in Vermont today, with a wind chill well below zero. I wanted a cup of hot, homemade soup and boy is this a great one. Easy to make and inexpensive, but, oh so gooooooood. The only thing I did differently from the original recipie, is add 1 teaspoon of white vinegar to my individual serving. You could add about 6 teaspoons to the entire batch, but not everyone likes it. I just think it adds a whole lot of flavor, but, my wife liked it the way the recipie called for. Really enjoyed this one. Thanks

I just made this soup this evening. A word of warning, to be careful when trying to double the recipe. I did a straight doubling and my results were a little thin. I ended up adding several more potatoes that I baked off quickly in the microwave, just to give it some good body. I’d probably say double the liquid, go 2.5 times on the potatoes to keep a good creamy, thick texture.

Found this not too long ago and after a soup craving of epic proportions, I made this today… at the end of May, lol. Fantastic. A big hit with my mother. She wanted it a little more chunky, but my blender had a mind of its own.
