Mini Bacon and Egg Quiches

Anytime I see something tiny and cute, I can’t help but get Homer Simpson’s voice in my head: “They’re cute because they’re little!” But these mini quiches really are cute, little - and delicious. The egg and cheese are a savory filling for the flaky, buttery rolls.

I used a mini muffin pan, but you could also use a standard-sized muffin pan for these - just cut the biscuits a little larger.

Ingredients:

1 can crescent rolls

1 egg, beaten

3/4 cup evaporated milk

1/2 t salt

1/4 t Worcestershire sauce

3/4 cup shredded Swiss cheese

6-8 strips cooked bacon, crumbled

Preheat oven to 325 degrees. Roll out crescent dough and, using a biscuit cutter or the rim of a glass, cut out enough rounds to fill your muffin tin. Press into muffin tin.

In a small bowl, combine egg, milk, Worcestershire and cheese. Pour into prepared pan, and sprinkle with crumbled bacon. Bake about 20 minutes, or until the egg has set and a knife inserted into a quiche comes out clean. Let cool, and serve.

    Thanks for your comments! They’re great for entertaining - as hors d’oeuvres or part of a breakfast/brunch, and so fun to eat. Actually, a little too fun to eat - it’s hard to eat just a few! :)

    I have only made mini quiches without a crust. I love the idea of using cresecent rolls.

    Looks great for the upcoming holidays.

    How many does this make? Would one egg be enough if I was going to use a normal muffin tin?

    Is 1 egg really enough for 20 mini quiches? Other recipes I see call for 4 eggs.I just want to be sure .
