We received an unexpected gift in the mail the other day. To say thanks, I whipped up a batch of these chocolate cherry cookies from Cooking Light. Since they recipe calls for using a mixer, they’re super easy to make and taste incredible. The tang of the cherries mixed with the chocolate is divine. I use dark chocolate chips to give more depth of flavor to the cookies, although semi-sweet work well too.
The cookies bake up to be a beautiful chocolate color and are crispy on the outside and soft and chewy on the inside, with the cherries serving as little bursts of tartness. They make great holiday cookies – and are great to give as a gift as well.
