I’m a sucker for a good cookie recipe, and have been working on cornmeal cookies for a while. Most recently, I had a recipe for cornmeal freezer cookies that I had tried over the holidays last year, but it just wasn’t quite right.
This month’s Everyday Food magazine from Martha Stewart featured Cornmeal Cookies. While the recipe was full of melt-in-your-mouth buttery goodness, I modified it a bit to give it a little extra flavor. Here’s the recipe:
Cornmeal Rosemary Cookies (adapted from Everyday Food, November 2008)
1 1/2 cups flour
1/2 cup cornmeal
1/2 tsp salt
1 1/2 sticks room temperature butter
3/4 cup sugar
1 tsp vanilla
1 egg
2 tbsp chopped fresh rosemary
Preheat oven to 350 degrees. Combine dry ingredients with a whisk in a medium bowl. Using a mixer, beat butter and sugar until fluffy. Add egg and vanilla, and beat until smooth. With mixer on low speed, slowly add dry ingredients, mixing just until ingredients are combined. Using a spoon or ice cream scoop, scoop dough and roll into balls, then place onto a parchment lined cookie sheet. Flatten each ball of dough slightly with your thumb, and sprinkle rosemary on top. Bake for about 14 minutes, then remove immediately to a cooling rack. Makes about 2 dozen cookies.
