Who doesn’t love a present? How about a packet waiting for you at your place at the dinner table, just waiting for you to open it up and see what’s inside? That’s the idea behind these salmon packets – they’re like a little gift at dinnertime.
They’re also a snap to make, and the paper holds the steam and juices inside so that the fish cooks throughout without drying out – an important step in fish cooking. In fact, my husband, who usually doesn’t like fish if it’s not deep fried or crusted in herbs and bread crumbs, actually requested that I make this meal again!
To make, place a baking sheet in the oven and preheat to 400 degrees. Cut two sheets of parchment paper into about 15 inch square sheets. Place one 6-oz salmon fillet on center of each sheet.
In a small bowl, combine:
4 minced garlic cloves
2 T olive oil
1 t dried basil
1 t salt
1 t pepper
2 T lemon juice (or omit and place lemon slices on top of fish prior to baking)
1 T dried parsley
Spread mixture evenly onto each piece of salmon and use kitchen string to tie up the sheets of parchment, being careful to tie them tightly so that no air will leak out. Place on top of preheated baking sheet and bake for 20 minutes.
Remove from oven and serve!
Note: the steam inside the packets will be extremely hot!



That looks so great and what a killer presentation.. I have never cooked with parchment but will have to try this one as I have a freezer full of Salmon from a recent fishing trip that hubby took to Alaska!! Thanks for sharing

This looks so good. Simple yet moist and delicious. You can also add leeks and veggies (thinly sliced) to cook along with it. And make it a pretty good “meal in a bag”
I’m a rather ill-equipped college student with a very finicky (and TINY) oven — would using foil instead of parchment work as well?

Jenn – I think foil would work – you’d just have to wrap them up a little differently, like a sandwich instead of tying with string.
This is easy , refined and delicious way to prepare salmon fillet. I love herbs esp fresh ones , so will be trying this out soon. Thanks for the sharing a simple yet delicious salmon recipe.

Love this recipe – worked like a charm the first time around. Easily adaptable to various cuts of fish and sauces. I used this methos with Dover sole and a white wine sauce, and it was very effective.
